Organic food on a plant based diet: what the doctors say
Organic food on a plant based diet: what McDougall, Campbell, Barnard and Goldhamer say about pesticides, cost and labels, with sources.
Updated . For education only, not medical advice.
Our view
The doctors on this site who have spoken about organic food put one step ahead of it: moving from animal foods to whole plant foods does far more good than choosing organic versions of the same plants123. Farm chemicals concentrate as they climb the food chain, so most of what people absorb arrives in meat, dairy and fish rather than in fruit, beans or grains42.
Even so, most of these doctors fill their own carts with organic produce when they can, from McDougall’s household to Campbell, Barnard, Goldhamer and Rogers56789. The proof is thinner than the preference: Campbell says long trials showing organic eaters live healthier lives have never been done, and McDougall found no firm sign that organic crops carry more nutrients1011.
We give most weight to the clinicians who have fed thousands of patients this way, McDougall and Goldhamer, and their line is the same: eat the plants first, add organic where the budget allows, and never let the label become a reason to put off the change1213.
Where they agree
They agree that the diet itself comes first; McDougall saw patients improve within days on conventionally grown starches and produce, Rogers calls the plants and the absence of oil the main thing, and the Ornish program’s site advises eating low on the food chain to take in fewer toxins1314. Goldhamer adds that a person living on ordinary supermarket produce would still do far better than almost anyone else13.
Most also agree that organic is the better choice when it is on offer: Goldhamer, Barnard, Campbell and Rogers all say so, and the Ornish program’s shopping guide suggests seasonal and organic produce when possible15716917. Putting an organic sticker on steak, cheese or snack food leaves it the same food, a point McDougall made in 2008 and Rogers repeated in 2026 about oily organic chips1118.
On cost they sound more relaxed than people expect: Barnard notes that a vegan saves enough on cheese and steak to cover the organic premium, and Rogers thinks the price gap is often overstated73. Goldhamer pointed out in 2022 that Costco had become the biggest seller of organic produce in the US, and the Ornish program’s budget guide shows that low cost healthy eating does not require buying everything organic819.
Where they differ
The doctors split on how loudly to push organic food, which items matter most, how much to fear glyphosate, and how strong the evidence is1202122.
Whether to make it a rule
In October 2008 McDougall explained that his program leaves organic food out of its teaching, because the gains would be invisible next to the switch in diet and an extra demand would make some patients give up1. In a 2021 talk he still called it a secondary point, one his family follows because farm chemicals are dangerous, but not a hurdle to put before people who are ill2312. Ron Weiss, a physician who farms in New Jersey, recalled in 2024 that Caldwell Esselstyn once answered a farm-day question on organic vegetables by saying people should simply eat their vegetables, and Weiss said he disagrees24. Rogers, in 2026, observed that neither Esselstyn nor McDougall makes much of organic produce and called that stance reasonable, yet still judged it worth buying259.
Which foods to buy organic
Barnard and Chef AJ use the Environmental Working Group’s pesticide lists and save their organic money for thin-skinned or leafy foods such as spinach and kale, caring less about anything peeled or grown underground2627. McDougall’s 2008 shopping advice also named apples, peaches and strawberries among the high-residue crops worth the extra cost28, and Rip Esselstyn pointed his 2018 audience to the Dirty Dozen list for the few foods that matter most29. Jeff Novick rejected that list in 2010: it ranks residue per sample but ignores how much of each food people eat, so by his estimate potatoes in the middle of the ranking add more pesticide per person than strawberries near the top20.
Glyphosate, GMOs and the label
Rogers worries most about herbicides, especially glyphosate on conventional soy and beans, and wants to avoid genetically modified crops, which organic rules keep out2130. Goldhamer in 2025 tied glyphosate on conventional wheat to some of the reactions people blame on gluten31, and Weiss warned in 2024 that non-organic oats, bread, pasta, lentils and beans often carry it32. Novick is warier of the label itself: in 2009 he pointed to the synthetic substances the US organic program permits, and in 2013 he reported that heavy metal tests on tea did not always favor the organic brands3334.
How strong the evidence is
Campbell said in 2013 that the few studies comparing organic and conventional eaters found no large difference, and in a lecture posted in 2017 that the indirect evidence satisfied him that eating organic is likely wise2235. The Ornish program’s site cites studies showing fewer farm chemicals in the urine of people who eat organic36. On nutrients the doctors disagree outright: McDougall wrote in 2008 that no conclusive evidence shows organic crops are more nutritious, while Chef AJ said in 2017 that studies find organic produce higher in nutrients1137.
What each expert says
JMJohn McDougall
McDougall’s 2008 newsletter kept organic food out of his program’s teaching while saying his own household makes the effort, and that nothing stops anyone from combining the two15. He argued that leaving animal foods behind cuts pesticide intake far more than any label, since the chemicals collect in fat high on the food chain4. In 2021 he still treated organic as a second step that must not block the first12.
Campbell said in 2013 that he prefers organic food, buys it where possible and keeps a home garden, while admitting its price keeps it from many people616. He accepts that direct long-term proof is nearly impossible to gather and leans on indirect evidence instead1035.
In a 2020 session Barnard said that, given the option, organic wins every time, and suggested paying for it with the money a vegan no longer spends on cheese and steak7. He would put organic spending first on delicate above-ground greens such as spinach, and last on root vegetables and peeled fruit26.
The Ornish program’s site advises choosing seasonal and organic produce when possible and eating low on the food chain to cut toxin intake1714. Its budget guide treats buying all organics as a costlier option rather than a requirement19.
Goldhamer said in 2017 that organic produce beats conventional, for its lower residues and to back the farmers who grow it, but that people eating conventional fruit and vegetables still thrive1513. In his view the people who should worry about residues are those eating animal foods, which can hold many times the concentration2. He gave the same two reasons for buying organic in 20228.
Rogers devoted a 2026 talk on his book The Medical Reformation to the question and concluded organic food is worth it for those who can afford it93. His concerns are glyphosate and other farm chemicals and genetically modified crops, though he warns that organic junk food is still junk213018.
Novick doubts the shopping shortcuts: in 2010 he argued the Dirty Dozen list misleads because it ignores how much of each food people eat, and said he would not shop by it20. He has also questioned what the organic seal guarantees, from permitted synthetic inputs to heavy metals in organic tea3334.
In a 2018 talk Rip Esselstyn told his audience they need not buy everything organic to eat his way cheaply, pointing them to the Dirty Dozen for the foods where it counts29. His PLANTSTRONG brand sells mixes, two of which its site says are made with organic ingredients38.
In 2017 Chef AJ said she eats organic fruits and vegetables and uses the Environmental Working Group’s lists, putting leafy greens ahead of peeled foods such as bananas3927. She found organic produce only slightly dearer at Costco and Trader Joe’s, organic grains and beans dearer still, and urged people to buy the best they can afford4041.
Following these doctors, we treat the move to whole plant foods as the step that matters most, with organic produce as a welcome extra where the budget allows1137. Which foods deserve the organic premium is where they differ, so weigh their reasoning against your own shopping and budget. Questions about pesticide exposure and a health condition belong with your own doctor. This page is education, not medical advice.
